辣子鸡块做法

[主料] 鸡腿4个
[调料] 食用油250g,干淀粉,干辣椒一碗,花椒3钱,盐,料酒,白糖少许,葱姜蒜

[做法]
1. 把鸡腿肉剔下来,切成3cm见方的块。用生粉,盐,料酒,盐,葱姜末腌两个小时入
味;

2. 锅内加入大量食用油,大火烧到八成热,鸡块下锅油炸;保持大火直到炸成金黄色。
注意要用大火,炸到外焦里嫩;

3. 干红辣椒切成3cm左右的段,去掉一部分辣椒籽,和花椒混合后备用;

4. 国内加油,烧热后放入姜蒜炒出香味,将辣椒加入大火猛炒,到有辣味产生,油呈黄
色,将鸡块加入锅中,加一小勺料酒焖一会。最后加入葱段,白糖,盐和少许味精,出
锅。
